The Chianti D.O.C.G. is the only raw material of this vinegar that is produced in a traditional way, by a slow drip of the wine through the fillings of a wood shavings layer. At the end of this process, the vinegar is aged in oak barrels to enhance the aroma and to soften the taste. This vinegar isn’t extremely strong rather it has a nice full, delicate and fine aroma, just a bit vinous, with a good balance between acid and bitter tastes with a light smell of oak.
