Description

Born for our own pleasure, from the selection of Sangiovese grapes from the Scopajo vineyard, those that grow, scattered, on alluvial deposits rich in iron, feldspar, mica and quartz, with white limestone pebbles, which are called Colombini here. A poorly ventilated vineyard, but with an intense reflected light radiation that gives a fresh, fine, mineral Sangiovese. The destemmed bunches macerate for a few hours at low temperature, and after pressing, the must is vinified in white with spontaneous fermentation.
The Rossato has a bright cherry color, a subtle nose of grapefruit, Mediterranean herbs and small red fruits, from the undergrowth that surrounds the vineyard.
The finish is fresh, savory enveloping.

Why we love it: it’s a smooth rosé, wth a delicate floral bouquet and a fresh and salty finish/em>

Tasting Notes

Pairings: we tasted the first bottle with a Cesar salad and this is our top recommendation. It also pairs nicely wieh piadina, wraps abd the Tuscan ‘5&5’ sandwich made with chickpea flour. Cocaccia and mortadella also make a great pairing
