That\u2019s a passive strategy to control the fermentation temperature so chilled thanks are not needed.<\/p>\n Water for washing and cleaning wine thanks is stored and, when possible, reused to clean floors.<\/p>\n No energy is consumed to chill the white must before the fermentation: grapes are harvested very early in the morning and delivered to the cellar immediately.
